It is a tribute to the traditional economic system of Transcarpathian villages, where each house had its own garden, each family knew the taste of its own onions and dill. Here, the old man has long been called a householder-housekeeper, who gets up before sunrise and works before breakfast.<\/p>\n<p>We wanted to restore this economic and caring spirit of Transcarpathia. When vegetables are not just a product, but the result of daily work, when greens and vegetables are not bought, but collected early in the morning from their own garden.<\/p>\n<h2>Grandfather Farm: Renaissance of Transcarpathian Gardening<\/h2>\n<p>The name \u201cDidko-ferma\u201d refers to local traditions, but our approach to business is completely professional. In these fields we grow what forms the basis of our menu from local products. Simple, but incredibly flavorful vegetables grow here:<\/p>\n<ul>\n<li aria-level=\"1\">potatoes \u2013 crumbly and aromatic, grown in rich mountain soil. They become the ideal basis for traditional Transcarpathian deruny;<\/li>\n<li aria-level=\"1\">carrots, beets, and celery \u2013 thanks to the clean mountain air, they have a natural sweetness that traditional Transcarpathian cuisine is famous for;<\/li>\n<li aria-level=\"1\">Seasonal vegetables \u2013 cucumbers, tomatoes, radishes, lettuce, zucchini, cabbage, pumpkins are harvested at the peak of their vitamin value.<\/li>\n<\/ul>\n<p>If Didko Farm is about satiety, then the mini-kertik right on the resort is about aromas and aesthetics. It is a small space where products are grown that add special charm and taste to dishes:<\/p>\n<ul>\n<li aria-level=\"1\">spicy herbs - rosemary, thyme and basil for meat delicacies;<\/li>\n<li aria-level=\"1\">vitamin greens - our favorites are crispy salads, dill, parsley, basil, mint, lemon balm, savory, chives. They are cut every morning, while there is still dew. It is at this time that the greens are the most fragrant and tender;<\/li>\n<li aria-level=\"1\">Herbs for tea \u2013 mint and lemon balm from our mini garden have a completely different, deeper aroma than any packaged analogue.<\/li>\n<\/ul>\n<p>\u201cFor a chef, having your own farm is like having your own palette for an artist. When I cook vegetables from our \u201cGrandpa Farm,\u201d I don\u2019t need a lot of spices, because they have their own deep, authentic flavor.
